Food Monday

I have no excuse. It's Monday and here's a great recipe.

I made this recipe a couple of weeks ago and it is amazing. Just be very careful not to overcook it. It is, after all, prime rib. If you don't have a meat thermometer, it's totally worth a couple of dollars to buy one. Better to spend there than to overcook a good (and pricey) cut of meat.

Christmas Dinner Standing Rib Roast

Ingredients:
2-3 Tablespoons olive oil
1 Tablespoon lemon pepper
1 ½ teaspoon garlic salt or powder
1 teaspoon dried rosemary
1 teaspoon black pepper
1 7 pound standing rib roast
Directions:
1. Rub olive oil over roast. Combine lemon pepper, garlic salt, rosemary and black pepper. Rub over roast.
2. Place roast, fat side up, in a large roasting pan. Insert a meat thermometer.
3. Bake, uncovered, at 425 degrees for 30 minutes. Reduce heat to 325 degrees and bake, 20 minutes per pound.
