Food Friday

On Easter Sunday our family is going to D's aunt's home to celebrate with their family. We'll get together for a good old traditional family pot luck, which I love. D's mom is overseeing the menu coordination and has asked me to bring two things - this Sweet Potato dish and cookies. It's a twist on your traditional Sweet Potato Casserole. I can't even remember where this recipe came from but it quickly became a familiar request from the family. The best part, you make it in the crock pot so I will put it on early Sunday morning before we leave for church and it will be ready when we get home.

Crock Pot Sweet Potatoes

3 1/2 - 4 lbs. sweet potatoes, peeled and cut into 2-inch chunks
1 20 oz. can apple pie filling
2/3 cup golden raisins or craisins
1/2 cup brown sugar
1 stick of butter, cut into 1/4 in. slices
1 cup pecans, toasted and chopped

Lightly coat 3 1/2 - 4 quart crockpot with cooking spray. Layer sweet potatoes, apples, raisins, brown sugar and butter slices. Cover and cook on low heat for about 6 hours or on high heat for 3-4 hours. Sprinkle with pecans before serving.
