Food Friday

Something light, fresh and fruity sounds good today! This is one of those easy, go-to recipes that I use for family dinners as well as pot lucks all the time. It's easy to double and/or make variations to depending on what you have in your pantry.

Fabulous Fruit Salad

1 red apple, cored and chopped
1 granny smith apple, cored and chopped
1 stalk celery, chopped
1 large or 2 small cans mandarin oranges, drained
1/2 cup dried cranberries
1/2 chopped pecans
1 8 oz. non fat lemon yogurt

Mix all together in a medium size bowl. Chill until ready to serve.

If you love toasted pecans like we do, it is definitely worth the time for this recipe. They add a great flavor!
Also, sometimes it is difficult to find lemon yogurt, so I've used lemon chiffon, key lime and plain and all were good (lemon chiffon is the best in my opinion). Enjoy!
